Steps to make Parda soya biryani:
  1. In a bowl take all-purpose flour,1 tsp oil and 1/2 tsp salt.Knead a soft dough using with sufficient water. Cover and keep aside. Wash rice and soak it in water.
  2. Boil soya chunks in 1 glass of water till soft. Drain and keep aside.
  3. Heat 1 cup oil in a pan fry 2 chopped onions. Fry till golden brown in colour. Remove from oil and keep it in a plate. Add chopped potatoes and fry till softened. Remove from oil and keep it in a plate.
  4. Heat 1 tbsp oil in a cooker.add bay leaves,cumin seeds and all whole spices. Fry till good aro.a comes out. Add remaining chopped onions and cook. Saute for a minute or till onion gets softened. Add ginger-garlic paste and cook.
  5. Add boiled soya chunks,carrots and fried potatoes. Mix everything well. Add turmeric powder,red chilli powder,coriander powder,biryani masala and salt and mix well. Add curd and cook for 5 minutes.
  6. Now start layering. Upon vegetables spread a layer of rice than sprinkle some fried onions than sprinkle some coriander and pudina leaves. Again spread remaining rice,some fried onions and then chopped coriander and pudina leaves. Add saffron milk and kewra essence. Now add 1 cup of water.cover the lid and apply 2 whistle. After 2 whistles remove cooker from heat.
  7. Take big sized ball from prepared all-purpose flour dough. Make a thick and big sized roti with the help of rolling pin.grease a kadhi with some oil.Put the roti on kadhai and stretch with light hand and cover the kadhai.
  8. Now on the bottom of roti first spread some fried onions and then spread some coriander and pudina leaves. Now spread 3-4 tbsp cooked biryani.sprinkle some ghee and stretches the edges of roti and close it in centre.
  9. Keep kadhai on gas stove. Cover with nonstick tawa and cook for 10 minutes on low flame. When the brown spots appear and roti releases the kadhai flip and again cook for another 10 minutes. Off the flame and give rest for 2 minutes.
  10. Keep it in a plate and cut with a knife carefully. Your parda soya biryani is ready to serve. Serve hot with raita.it is a complete meal.
