  5. Take Salmon with skin taken off 1 per person
  6. Prepare 1 tbsp Pesto per person
  7. Prepare Baby tomatoes halved approx 8 per person

If you don't it does not take long to make a batch and the smell of fresh basil is just gorgeous. Set aside the pesto and pesto oil.

Instructions to make Salmon Pesto:
  1. Place handful of trimmed beans onto grease proof paper do this for each person add olive oil, salt and pepper
  2. Place skinless salmon nice side up on top of the green beans
  3. Use one tablespoon of pesto per portion to cover fish and place halved tomatoes on top and around sides
  4. Fold grease proof paper over fish and make a parcel and place on baking tray. Cook in oven at 180oC for 20 to 25 mins
  5. Undo parcel and serve and enjoy. We had sauteed potatoes with ours.
