The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

Just lightly fry corn tortillas, roll them up with Jack or cheddar cheese, cover with a tomato and green chile sauce, more cheese, and bake. Pour in the red sauce, chicken broth, cilantro, salt and pepper. They can be prepared simply with just cheese, or be spruced up by adding a little bit of beef or chicken to appeal to the meat-eaters in your household.

Steps to make Enchiladas:
  1. Put water in a pot & boil the potatoes. Get another pot & pour water & let it boil then place the chicken breast. Wait until they're fully cook then place them to cool.
  2. Peel the potatoes & smash them. Shred the chicken by hand then u mix it with the smash potatoes add the salt, pepper, & butter together.
  3. Heat the tortillas in pan or in microwave. Let them get soft not fully cooked.
  4. Dip the tortillas in the Palma sauce & start putting in ur smash potatoes with chicken. Start rolling them into flautas & dip in the sauce again then Start placing them in ur greased pan.
  5. Preheat oven at 350° after all ur enchiladas are in ur pan spread the cheese on top. Place them in oven & wait until the cheese on top is melted it should take about 15-20 min.
  6. Take out let them cool for about 5-10 mins or u could eat them right away just make sure not to burn urself.
  7. Now enjoy them

When the enchiladas are completely cooled, scoop the enchiladas into a freezer-safe or an aluminum foil container. Cover the container with plastic wrap and aluminum foil. To freeze individual enchiladas, freeze the sauce on the side and wrap each enchilada tightly in plastic wrap before wrapping them in aluminum foil. Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down.
