Heat the olive oil in a skillet over medium-high heat. Add the ground beef to the skillet and brown until almost cooked through. Add the onion and continue to cook, stirring occasionally, until the beef is fully cooked and the onion has softened. Sprinkle the green peppers and cheeses down the center of the tortillas; add jalapeno if desired.

- Brown off the mince in a pan, I didn't use oil, but you can if you want. After a few mins, thrown in some chopped peppers then your spice mix

- Take out the tortillas. Add a good spoonful of sauce onto each one. Fold up and add to baking tray. Add sliced tomatoes on top and sprinkle with grated cheese
- Pop in the oven for about 8 mins. Sprinkle with oregano and serve
